  • 1 packet of Suzi Wan® Egg Noodles or Noodle Nests
  • 300g raw, skinless salmon
  • 3 avocados
  • the juice of half a lemon
  • 1 tsp ground ginger
  • 4 tbsp Suzi Wan® Soy Sauce

  1. Cut the salmon into 2-cm cubes.
  2. Put the salmon, soy sauce and ginger in a shallow bowl. Cover with cling film and place in the fridge for 20 minutes.
  3. Slice the avocados, put them in a bowl with the lemon juice and set to one side.
  4. 5 minutes before serving, cook the noodles for 4 minutes, then drain.
  5. Combine the salmon, its marinade, the avocados and the noodles in a mixing bowl, serve immediately.
