  • 2 packets Suzi Wan® Vermicelli
  • ¼ cucumber
  • 1 courgette
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsp vegetable oil
  • 12 raw king prawns
  • ½ tsp Suzi Wan® Chilli Paste (optional)
  • 4 tbsp Suzi Wan® Fish Sauce
  • juice of 1 lemon
  • 2 tbsp caster sugar
  • 8 sprigs fresh coriander or 2 tbsp frozen coriander leaves

  1. Cook the vermicelli according to the packet instructions. Drain and run under cold water.
  2. Peel the cucumber.
  3. Grate the courgette without peeling, then grate the cucumber. Peel the prawns and cut into chunks. If you like, cook 4 of the peeled prawns whole (leaving the tails intact) to use as a garnish.
  4. Peel and finely slice the onion. Heat the oil in a wok or frying pan and brown the onion with the prawns for 3 minutes. Moisten with a tablespoon of fish sauce. Set to one side.
  5. In a bowl, prepare the sauce: mix the lemon juice, sugar, fish sauce, peeled and crushed garlic, and 50 ml water. Put some cold vermicelli in 4 bowls and top with the grated cucumber and courgette, prawns, 2 tbsp of sauce and the chopped coriander.
  6. Serve immediately.
