  •  2 small pineapples
  • 12 prawns
  • 1 tbsp Suzi Wan® Chilli Paste
  • ½ bunch of coriander
  • ½ jar of Suzi Wan® Bean Sprouts
  • 1 carrot
  • 3 tbsp unsalted peanuts
  • 1 tbsp Suzi Wan® Fish Sauce
For a novel way to serve the dish, you can use the empty pineapple shells as bowls.

  1. Cut the pineapples into two lengthways, carefully remove the flesh and cut it into small pieces.
  2. Peel the prawns and cut them into two lengthways.
  3. Finely chop the coriander. Peel the carrot and cut it into thin batons.
  4. Toast the peanuts in a dry frying pan then roughly chop them.
  5. Put the pineapple, prawns, drained and rinsed bean sprouts, chilli paste, fish sauce, coriander, carrot and peanuts in a mixing bowl.
  6. Mix well to combine and serve immediately.
