  •  20 king prawns
  • 2 chicken breasts
  • 1 pack of Suzi Wan® Vermicelli
  • 1 jar Suzi Wan® Vietnamese Salad with Peppers
  • 2 x 200 ml cartons of Suzi Wan® Coconut Milk
  • 2 tbsp fresh or frozen finely chopped lemongrass
  • 1 tbsp Suzi Wan® Fish Sauce
  • a dash of Suzi Wan® Chilli Paste (optional)
  • 1 tbsp groundnut oil
  • a few coriander leaves

  1. Cook the noodles according to the packet instructions.
  2. Peel the prawns, leaving the ends of the tails intact. Cut the chicken into strips.
  3. Mix the coconut milk, lemongrass, fish sauce and chilli paste together in a bowl.
  4. Heat the oil in a wok or frying pan and stir-fry the prawns and chicken for 7 minutes. Add the drained vegetables and leave to cook for another 2 minutes. Add the noodles and the coconut milk mixture.
  5. Mix well and leave to cook for 3 minutes. Serve hot garnished with a few coriander leaves.
