  •  225 g minced pork or sausage meat
  • 2 tbsp Suzi Wan® Soy Sauce
  • 1 tbsp Suzi Wan® Fish Sauce
  • ½ tsp ground black pepper
  • 450 g Suzi Wan® Egg Noodles
  • 1 tbsp toasted sesame oil
  • 2 tbsp groundnut oil
  • 4 cloves of garlic
  • A 3-cm piece of root ginger
  • 5 spring onions or 6 chive sprigs and 2 shallots
  • ½ tsp Suzi Wan® Chilli Paste
  • 1 tsp Sichuan peppercorns

  1. Mix the meat, soy sauce, fish sauce and black pepper together in a bowl. Leave to marinate for 20 minutes.
  2. Peel and crush the garlic, grate the ginger.
  3. Finely slice the spring onions.
  4. Toast the Sichuan peppercorns in a dry frying pan for 3 minutes, stirring continuously, then crush using a pestle and mortar.
  5. Plunge the noodles into a saucepan of boiling water for 5 minutes. Drain the noodles, rinse them under cold running water and drain again. Put the noodles in a deep bowl and drizzle in the sesame oil, stirring gently.
  6. Heat a wok over a very high heat and pour in the groundnut oil. When it starts to smoke, stir-fry the garlic, ginger and spring onions for 30 seconds.
  7. Add the meat and cook, stirring continuously, until browned all over. Add the chilli paste and noodles.
  8. Mix gently.
  9. Sprinkle with the Sichuan pepper.
  10. Serve immediately.
