  • 400 g cod loin
  • 3 tbsp Suzi Wan® Coconut Milk
  • 2 finely chopped onions
  • 1 peeled and crushed garlic clove
  • 3 cardamom pods
  • 2 cloves
  • 6 coriander sprigs
  • 2 tbsp oil
  • the juice of 1 lime
  • ½ litre chicken stock
  • 300 g basmati rice
  • 3 tbsp Suzi Wan® Fish Sauce
  • ½ tsp Suzi Wan® Chilli Paste
  • 60 g cashew nuts

  1. Open the cardamom pods, remove the seeds and place them in a small bowl, add the cloves and crush roughly.
  2. Heat the oil in a wok, add the onions and cook until golden.
  3. Add the garlic, spices, lime juice and coconut milk, stir, then add the chicken stock and basmati rice. Cover and leave to cook for 15 minutes.
  4. Cut the cod into small chunks. Add to the wok with the fish sauce, cover and leave to cook for 5 minutes.
  5. Spoon into small bowls and top with the cashew nuts and coriander leaves. Serve immediately.
