  • 600 g chicken breast
  • 4 tbsp peanut butter
  • 2 tbsp honey
  • 2 tbsp Suzi Wan® Soy Sauce
  • 4 cloves of garlic
  • 50 g root ginger
  • 2 tbsp curry powder
  • 1 x 200 ml carton of Suzi Wan® Coconut Milk
  • 2 tbsp Suzi Wan® Fish Sauce
  • 1 jar Suzi Wan® Vietnamese Salad with Peppers
  • 1 tsp Suzi Wan® Chilli Paste
  • A few coriander leaves
  • 3 tbsp vegetable oil
You can prepare the chicken the day before and leave it to marinate overnight. The remainder of the dish is very quick to prepare.

  1. Peel the garlic. Crush 2 cloves.
  2. Peel and grate the ginger.
  3. Cut the chicken into small pieces.
  4. Mix the peanut butter, honey, soy sauce, crushed garlic, ginger, curry powder and coconut milk together in a bowl.
  5. Then add the chicken pieces. Leave to marinate for at least 4 hours.
  6. Drain and rinse the vegetables.
  7. Crush the remaining garlic cloves.
  8. Thread the chicken pieces onto wooden skewers.
  9. In a wok or large frying pan, heat 2 tablespoons of oil and brown the garlic for 1 minute over a high heat, add the vegetables, the chilli paste and the fish sauce.
  10. Mix well and leave to cook over a low heat for 5 minutes.
  11. In a lightly-oiled frying pan, cook the chicken skewers for around 5 minutes over a high heat, turning halfway.
  12. Serve the skewers on top of the vegetables. You could also serve with white rice or noodles.
