  •  8 eggs  
  • 4 Suzi Wan® Black Mushrooms
  • ½ packet of Suzi Wan® Rice Vermicelli
  • 250 g sausage meat
  • 2 tbsp Suzi Wan® Fish Sauce
  • 1 onion
  • 1 bottle of Suzi Wan® Spring Roll Sauce
  • 8 coriander sprigs
  • 1 clove of garlic
  • oil or butter
If you don’t have a blini pan, use a large frying pan and cut the omelettes into pieces.
  1. Soak the rice vermicelli and black mushrooms in two separate bowls of hot water for 10 minutes.
  2. Peel and finely chop the onion.
  3. Brown the sausage meat in a dry pan. Set to one side.
  4. Roughly chop the drained mushrooms and rice vermicelli, coriander and onion.
  5. Beat the eggs in a bowl.
  6. Add the mushrooms, rice vermicelli, onion, sausage meat and fish sauce and mix well to combine.
  7. Cook small omelettes in a blini pan, 3 minutes on one side, then 2 on the other.
  8. Serve immediately with the spring roll sauce, after first adding the clove of garlic, crushed in a garlic press, to the sauce.
