  • 8 sheets of brick pastry
  • 4 bananas
  • 4 tbsp Suzi Wan® Coconut Cream
  • 2 tbsp ground almonds or desiccated coconut
  • 4 tbsp caster sugar
  • 40 g butter
  • 16 small wooden skewers
  1. Cut the bananas into pieces and then mash roughly with a fork.
  2. Add the coconut cream, sugar and ground almonds or desiccated coconut. Mix to combine.
  3. Preheat the oven to 180°C.
  4. Melt the butter over a low heat, without letting it brown.
  5. Lay out the sheets of pastry on the work surface and brush with the melted butter.
  6. Arrange an eighth of the mixture on one edge of the pastry sheet and roll it carefully.
  7. Pinch the ends together and twist once to seal, securing with a wooden skewer.
  8. Place the parcels on a baking tray lined with greaseproof paper and cook in the oven for 15 minutes.
  9. Remove from the oven, remove the wooden skewers and serve warm.
