  • 3 gelatine leaves
  • 200 ml Suzi Wan® Coconut Milk
  • 250 ml double cream
  • 1 vanilla pod
  • 50 g caster sugar
  • 200 ml red berry coulis
  • a few fresh red berries for decorating

  1. Soak the gelatine leaves in a bowl of cold water for around 10 minutes to soften them.
  2. Pour the coconut milk and double cream into a saucepan. Split the vanilla pod into two lengthways and scrape the seeds into the saucepan using the tip of a knife. Add the sugar, mix and bring to the boil. Remove the saucepan from the heat, cover and leave to infuse for a few minutes.
  3. Drain the gelatine leaves and add them to the saucepan, mixing to melt the leaves into the cream. Divide the mixture between 4 glasses and leave to cool. Then put the glasses in the fridge for 4 hours.
  4. Pour the coulis over the panna cotta, decorate with the fresh berries and serve.
