  • 500 ml Suzi Wan® Coconut Cream
  • 5 tbsp sugar
  • 1 small packet of vanilla sugar
  • A pinch of salt
  • 2 small, very ripe bananas, sliced
  • 100 ml milk
  • 1 tbsp cornflour
  • 2 eggs
  • 1 tbsp lime juice
  • 150 ml crème fraîche
  • a few roughly chopped pistachios for decoration
  1. Bring the coconut cream, sugar, vanilla sugar and salt to the boil in a pan.
  2. Add the banana, remove from the heat and blend to a puree.
  3. Mix the milk with the cornflour and eggs, then add to the banana mixture.
  4. Bring the crème fraiche to the boil, stirring continuously.
  5. Strain immediately into a mixing bowl using a sieve, then leave to cool, stirring from time to time.
  6. Once the crème fraiche has cooled, stir in the lime juice and banana mixture.
  7. Serve in small bowls or ramekins, decorated with the pistachios.
