Ingredients
  • 300 g pork fillet
  • 200 ml Suzi Wan® Coconut Milk
  • 2 shallots
  • 1 broccoli crown
  • 2 tbsp curry powder
  • A handful of raisins
Tip
For a more substantial dish, serve with rice.
Preparation
  1. Cut the pork into cubes measuring 2-3 cm.
  2. Cut the broccoli into small florets. Finely slice the shallots.
  3. Blanch the broccoli florets in boiling water for 2 minutes.
  4. Brown the shallots in a lightly-oiled frying pan, then add the pork and the drained broccoli. Cook for 2 minutes.
  5. Add the coconut milk, curry powder, salt, pepper and raisins. Reduce the heat, cover and continue to cook for 10 minutes, stirring occasionally. Serve immediately.
