Ingredients
  • 1 packet Suzi Wan® Rice Vermicelli
  • 2 sirloin steaks
  • ½ cucumber
  • 2 small carrots
  • 1 jar of Suzi Wan® Bean Sprouts
  • 1 clove of garlic
  • juice of 1 lemon
  • 3 sprigs of mint
  • 3 sprigs of coriander
  • 2 tbsp unsalted peanuts
  • 5 ml oil
  • 15 ml Suzi Wan® Fish Sauce
  • 120 ml Suzi Wan® Spring Roll Sauce
  • pepper
Tip
You can also add 1 or 2 spring rolls (heated in the oven and chopped into three) to each serving, or 1 or 2 cooked and shelled prawns.
Preparation
  1. Cook the rice vermicelli according to the packet instructions.
  2. Slice the meat into thin strips.
  3. Peel the cucumber and cut into fine slices or matchsticks.
  4. Peel the carrots and cut into thin strips.
  5. Rinse and drain the bean sprouts.
  6. Peel and crush the garlic.
  7. Crush the peanuts using a pestle or thick-bottomed glass.
  8. Heat the oil in a frying pan and cook the meat for 3 minutes, stirring constantly. Add the pepper and fish sauce.
  9. Put the rice vermicelli in a large salad bowl together with the bean sprouts, carrot, cucumber and beef.
  10. Pour the spring roll sauce into a small bowl. Add the lemon juice and garlic and mix.
  11. Pour the sauce over the vermicelli and mix gently.
  12. Place into small serving bowls and top with the chopped herbs and crushed peanuts.
  13. Serve immediately.
