Ingredients
  • 120 g flour plus a bit extra for dusting the moulds
  • 40 g melted butter
  • 60 g sugar
  • ½ sachet baking powder
  • 200 ml Suzi Wan® Coconut Cream
  • 20 g desiccated coconut

For the icing
  • 200 g icing sugar
  • 50 g butter
  • 500 ml Suzi Wan® Coconut Milk
Tip
For an extra special finish, put the icing in a piping bag and use a fluted nozzle to pipe it onto the cupcakes.
Preparation
  1. Preheat the oven to 180°C.
  2. Whisk together the sugar and eggs. Add the melted butter, coconut cream and flour gradually. Finally add the baking powder and desiccated coconut.
  3. Dust cupcake moulds with flour, fill to three-quarters full and bake in the oven for 20 minutes. The cupcakes are cooked when a cake skewer inserted in the centre comes out clean.
  4. Using an electric mixer, beat together the icing ingredients until you have a smooth and homogenous mixture. Use the icing to top the cupcakes. Use a sprinkling of desiccated coconut to decorate.
