Ingredients
  • 4 small courgettes
  • 10 large, raw prawns
  • 3 tbsp Suzi Wan® Coconut Milk
  • 1 clove of garlic
  • ½ tsp Suzi Wan® Chilli Paste
  • 2 tbsp Suzi Wan® Fish Sauce
  • ½ tsp curry powder
  • 8 coriander sprigs
  • 12 small wooden skewers
  • 1 bottle of Suzi Wan® Spring Roll Sauce
Tip
You can cook the rolls in the microwave. Place the rolls onto a plate, cover with cling film, pierce a few holes and cook for 3 minutes on full power.

Preparation
  1. Slice the courgettes into fine strips using a peeler. Plunge the courgette strips into salted boiling water for 1 minute, then drain carefully and plunge into iced water.
  2. Peel the prawns. Peel the garlic. Put the prawns, garlic, coconut milk, chilli paste, curry powder, fish sauce and coriander in a blender. Blend to combine. Drain the courgette strips and lay them out on kitchen roll.
  3. Lay 3 courgette strips on top of one another, place a heaped teaspoon of the prawn mixture on one end and roll carefully, without pressing down too much. Insert a skewer to keep the roll in place. Repeat until you have used all the ingredients.
  4. Steam for 6 minutes.
  5. Serve warm, hot or cold, accompanied by the spring roll sauce and a few salad leaves.
  6. You can also add a few rice vermicelli that have been immersed in hot water in advance.
